I have a pretty large problem on Sundays. All I want to do is eat. Rico is always stuck doing work or something not fun and I don’t want to watch all my TIVO and bother him, so I’m left with eating. Channeling my need for chocolate yesterday, I wanted to find an eggless recipe (since I was out and didn’t want to leave the house) that used cocoa powder, something I am well stocked in. I found these gems and my afternoon was made. Bake away, but please, please do refrigerate the dough, otherwise it’s way too soft and the cookies will spread during baking.

I honestly need someone to start taking pictures for me. This is getting embarrassing. They still look kinda chocolaty and happy though on their wicker background.

Ingredients:
- 1 cup of butter, at room temperature
- 3/4 cup sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1/4 cup cocoa powder
- 1/4 teaspoon of salt
Beat butter and sugar until very light in color and fluffy, occasionally scraping down the sides of the bowl with a spatula. Add vanilla. Mix in remaining ingredients slowly on low speed, until it is just incorporated and dough sticks together when squeezed with fingers. Form dough into a flattened disk; wrap in plastic. Chill until firm, at least 1 hour.
Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper. (I used a Silpat.)
Use a tablespoon to form the dough into balls just slightly smaller than a tablespoon (don’t round the tablespoon) and place on the prepared baking sheet. Bake until firm, 20 to 25 minutes.
Makes around 40 cookies

This is my friend, Rogelio, and me at an 80′s Prom Party the Girlfriend and I threw last spring. I served cookies similar to these and I found them smushed everywhere for at least a week. They may be delicious, but I do not suggest serving crumbly, butter cookies at an event where you smuch 60 people into a 550 square foot apartment. In prom dresses. From the 80′s.
