I’ve experimented with all types of cookies in my day, from biscotti to cakey to sandwich to crispy. However, I do have one favorite go-to that is always a crowd pleaser. There is nothing like the simplicity of an oatmeal chocolate chip cookie, especially when they take no time to make. Now where did I get my favorite recipe from may you ask? Not some fancy cookbook, not from my ingenious Little Mommies, but from the top of the Quaker Oats can. Yup, the Vanishing Oatmeal Raisin Cookies, adapted to be Oatmeal Chocolate Chip. I suggest if you ever need a quick fix, make these and enjoy, they are more than worth it.
Oh, and I know cookies aren’t good for you. Supposedly these sugar delights are 100 calories each–says the Quaker web site–however, I don’t agree. Whoever isn’t too lazy and decides to calculate out the calories, please don’t let me know. Ignorance is bliss.
Vanishing Oatmeal Raisin Chocolate Chip Cookies
Adapted from QuakerOats.com/Oatmeal Tin
Ingredients
- 1/2 cup (1 stick) plus 6 tablespoons butter, softened
- 3/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups Quaker® Oats (quick or old fashioned, uncooked)
- 1 cup semisweet chocolate chips
Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and chocolate chips; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
Makes about 4 dozen cookies, I think.
