I think Pizza is one of God’s greatest gifts to earth. The idea is simple, yet there are millions of things you can throw on millions of types of crusts to create something absolutely delicious. Living in NYC, I’m completely surrounded by the big wigs of the dough, such as Lombardi’s and Grimaldi’s. As delicious as they are, the 2 hour wait for a pizza pie is appalling. You should see the way they treat you at Grimaldi’s too! They herd you like cattle, and if you fall out of line or take too long to order, it’s like the British are coming and you’re the dude who forgot to flash the lantern. My personal favorite is Crocodile Lounge, a bar where you get a free personal pie with each drink purchased…welcome 2 a.m. danger zone!!!

Meet the wall of the Pizza Hut in Hong Kong. Surprisingly, Pizza Hut is a really nice, family restaurant in HK with pretty tables, waitresses, and a full menu of pizza, pasta, meat and fish. And as their signage proclaims, their pizza is “sixxling.” Almost as entertaining as the Carlsberg cans that say, “Probably the Best Beer” on them. Just probably…
I do love my pizza though and I had to find a way to eat it without my waistline suffering. The dish below is great as a dinner for one, or app split between two, and can even be served cut up as hors d’oeuvres at a dinner party. Plus, its only 200 calories a pie

One Pizza is around 200 calories
Ingredients:
- 1 Flatbread (I used Damascus Bakery Whole Wheat Roll Up, 110 calories each.)
- 1/4 teaspoon salt
- 1 (10 oz) package frozen, chopped spinach
- 2 teaspoons of garlic salt
- Olive oil Pam
- 1 ounce fat free Ricotta cheese
- 1/2 ounce goat cheese crumbles
Preheat the oven to 425 degrees. Place the flatbread on a sheet pan and sprinkle with the salt. Bake in hot oven for about one minute. Microwave the spinach according to the directions on the package, and drain thoroughly. Be sure to squeeze out all the excess moisture. In hot pan, sauté the microwaved spinach quickly with the garlic salt and olive oil Pam, mostly to combine. Spread the spinach out on the flatbread and dot with both cheeses. Place the sheet pan into the oven for 5 minutes, or until the edges get brown and crispy and the cheese melts. Eat while hot!
If you decide to serve this pizza at a party, I suggest using olive oil instead of Pam when you sauté the spinach. As the pizza cools, the spinach starts to dry out, and using olive oil would help to prevent this terrible occurrence. These pizzas hold up pretty well and get quite crispy, so using tomato sauce is an option as well. The Damascus Bakery Roll Ups are great because they have 10 grams of protein and 7 grams of fiber. If you’re really hungry, you could also add broccoli, mushrooms, and/or roasted squash. But don’t plan on going on a date after eating this guy; if you’re anything like me, that amount of veggies leaves you looking five months pregnant….
